Dear Diary,

For months, maybe even a year, my friends and I talked about going on a weekend road trip. But the stars never aligned. Baseball games, ballet practices, and family functions pushed our plans back. Before we became moms, we took trips without advanced notice. We took a bite out of the big apple; got a taste of chocolate city; and tried our luck on the strip. Now that we have children, we haven’t made time for a girls night out. Then finally, we decided to do have fun and stay up past our bedtime.

But before we hit the highway and headed to Atlantic City to celebrate summer, we had to eat a hearty yet healthy breakfast.

The older we get the more we count calories. We don’t want to stop eating out though! That’s why we ordered off the Fit Fare® menu at Denny’s. The items offer us healthy eating choices without compromising on taste, value or variety.  We opted for something lower in fat and calories and higher in protein and fiber.

We ordered the Fit Slam®, which came with egg whites scrambled together with fresh spinach and grape tomatoes, plus two turkey bacon strips, an English muffin and seasonal fruit.

Even though we ate a light meal, it fueled us from Pittsburgh to Atlantic City.

Here’s how we watched what we ate while on the road:

  1. Eat Breakfast: Be sure to eat a healthy, hearty meal before you get on the road. Most rest stops only offer fast food options, like French fries, hamburgers and pizza.
  2. Pack Snacks: We brought a bag of snacks to satisfy our cravings. We packed fruit snacks, pretzels and mixed nuts.
  3. Drink Water: I drink more coffee than usual when driving for long periods of time. So we made sure to bring bottled water. Tip–buy your water before you get on the road to save money.
  4. Log Onto Yelp: Use apps to find restaurants that offer a variety of options. We even tried BBQ seitan wings for the first time.

Because we ate light, we weren’t weighed down at night. Once we checked into the hotel and took some pictures of the view, we headed to the boardwalk. We cheated at dinner and ordered lots of carbs and toasted to our time off from our kids!

She later returned to her hometown of Pittsburgh, PA to raise her daughter Caitlynn, now 4-years-old. During her 10-month-stint as a stay-at-home mom, Caitlynn inspired her to create this blog, and Diary of a First Time Mom was born on Mother’s Day 2012. Two years later, she expanded the family to include 20+ writers. Currently, Heather serves as the communications director at Allies for Children. In addition, she is the owner of Motor Mouth Multimedia, which ranked #49 in Startup Nation’s Home-Based 100 Competition sponsored by Discover Card and Sam’s Club. Recently, The Pittsburgh Foundation and The Heinz Endowments selected Heather to receive an Emerging Black Artist award to develop Diary of a First Time Mom.
